Brunch Peaches

2 pkg. 3 oz. cream cheese, softened
2 T. apricot preserves
I c. pineapple tidbits, drained
3 15 1/4 oz. cans peach halves,drained
lettuce leaves
fresh mint

In a small mixing bowl, beat the cream cheese and preserves until blended. Stir in pineapple. Place peaches cut side up on a lettuce lined serving platter. Fill each peach with the cream cheese mixture. Garnish each peach with a mint leaf.

Recipe Note: This is such a pretty presentation for a brunch. And so easy! They can be made up the night before, the platter covered and it is ready to serve.
