Biscuit Muffins

1/2 c. Sour cream
1/3 c. lemon lime soft drink
2 c. biscuit mix
3 T. butter, melted and divided

Combine sour cream and soft drink in medium bowl. Stir in biscuit mix with a fork until dry ingredients are moistened. Spoon into lightly greased miniature muffin pans, brush with half the butter. Bake at 450° for 8 to 10 minutes or until golden. Brush with remaining butter.

Recipe Note: At brunch time most guest prefer small bite-size menu items so that they can enjoy all that is provided for the event. These little muffins are quite moist.
